Spicy parsnip patties

  • 350g parsnips – peeled and chopped
  • 1 leek – washed and finely sliced
  • 1 garlic clove – peeled and crushed
  • 25g dairy-free margarine (such as Pure or Vitalite)
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  1. Boil the parsnips for 10 minutes until tender.
  2. In a separate pan, melt the margarine and fry the garlic, coriander, cumin and turmeric for 2-3 minutes.
  3. Stir in the leek and cook for another 3 minutes.
  4. Drain and mash the parsnips, stir in the leek mixture and then leave to cool.
  5. Shape into patties and fry for 3-4 minutes on each side.
  6. Serve with a fresh salad, or in a bun with ketchup and chips.
